  • 2 cups fresh pineapple, diced
  • 8 oz cream cheese, softened
  • 1 cup sugar
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 cup milk
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish generously.
  2. Mix the diced pineapple with 1/2 cup of sugar and allow it to sit.
  3. Beat the cream cheese with the remaining sugar until smooth.
  4. Add the flour, baking powder, milk, melted butter, vanilla extract, and salt to the cream cheese mixture. Stir until well combined.
  5. Pour the sweet pineapple mixture into the prepared baking dish, then pour the cream cheese batter over the top.
  6. Bake for 30-40 minutes or until the top is golden brown.
  7. Let the cobbler cool slightly before serving.
