A visually stunning and delicious cake made with purple sweet potatoes, offering a unique twist on traditional desserts.

  • 1 cup purple sweet potatoes, mashed
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup buttermilk
  • Food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a cake pan.
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Combine the mashed purple sweet potatoes with the butter mixture.
  5. Mix together the flour, baking powder, and salt in a separate bowl.
  6. Add the dry ingredients to the sweet potato mixture, alternating with buttermilk, and mix until smooth. Add food coloring if desired.
  7. Pour the batter into the prepared pan, spreading evenly.
  8. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  9. Let the cake cool in the pan for a few minutes before transferring to a wire rack.
