A flavorful and zesty lemon chicken recipe perfect for busy weeknights and last-minute dinners.

  • 4 boneless, skinless chicken breasts
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup flour
  • Salt and pepper to taste
  • 3 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • Juice of 2 lemons
  • Zest of 1 lemon
  • Chopped parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix together 1/4 cup of flour, salt, pepper, and 1/2 cup of grated Parmesan cheese in a shallow dish.
  3. Dredge each chicken breast in the flour mixture.
  4. Heat 3 tablespoons of olive oil in a large oven-safe skillet over medium-high heat.
  5. Add the dredged chicken breasts to the skillet and cook for about 5-6 minutes on each side.
  6. Remove the chicken from the skillet and set it aside.
  7. Melt 4 tablespoons of unsalted butter in the same skillet.
  8. Stir in the minced garlic and cook until fragrant.
  9. Pour in the juice of 2 lemons and sprinkle in the zest of 1 lemon.
  10. Return the chicken to the skillet, coating it in the lemon-garlic sauce.
  11. Transfer the skillet to your preheated oven and bake for 10-15 minutes.
  12. Garnish with chopped parsley before serving.

Notes

Pair with roasted vegetables or a crisp salad. Store leftovers in an airtight container for up to 3 days.
