A comforting dish of tender salmon paired with creamy orzo, vibrant cherry tomatoes, and fresh spinach, perfect for any occasion.

Ingredients

  • 2 cups orzo pasta
  • 1 pound salmon fillets
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups spinach
  • 1 teaspoon lemon zest
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Stir in the minced garlic and cook for another minute.
  4. Pour in the orzo and cook according to package directions.
  5. Season the salmon fillets with salt and pepper and place them on top of the orzo.
  6. Cover the skillet and cook until the salmon is cooked through, about 5-7 minutes.
  7. Add the halved cherry tomatoes, spinach, and lemon zest, stirring to combine.
  8. Cook for another 2-3 minutes until the spinach wilts.
  9. Serve warm, garnished with fresh parsley.

Notes

For a vegetarian option, replace salmon with chickpeas. Store leftovers in an airtight container for up to three days.
