Delicious and fluffy muffins filled with savory sausage and cheese, perfect for breakfast or brunch.

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1/2 cup milk
  • 1 cup cooked sausage, crumbled
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with muffin liners.
  2. In a mixing bowl, whisk together the flour, baking powder, salt, black pepper, and garlic powder if you’re using it.
  3. In another bowl, beat the eggs until frothy, then stir in the milk.
  4. Add the crumbled sausage and shredded cheese to the egg mixture, mixing well.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  6. Divide the batter evenly among the muffin cups, filling them about 2/3 full.
  7. Bake for 18-20 minutes or until the muffins are golden brown and a toothpick inserted comes out clean.
  8. Allow the muffins to cool for a few minutes before removing from the tin and serve warm.

Notes

Store leftover muffins in an airtight container in the fridge for up to three days or freeze for up to three months.
