  • 1/2 cup almond flour
  • 2 large egg whites
  • 1/4 cup granulated sugar
  • 1/4 cup beet puree
  • 4 oz goat cheese
  • 2 oz cream cheese
  • 1 tbsp fresh herbs (like thyme or chives)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper to ensure those lovely macarons don’t stick.
  2. In a food processor, combine the powdered sugar and almond flour; pulse until fine.
  3. Beat egg whites until soft peaks form. Gradually add granulated sugar and continue beating until stiff peaks form.
  4. Gently fold the beet puree into the egg mixture.
  5. Fold in the dry ingredient mixture until combined.
  6. Pipe small circles onto the baking sheet, leaving space between them.
  7. Let them sit for about 30 minutes to form a skin.
  8. Bake for 15-20 minutes, then let the shells cool completely before removing them from the parchment paper.
  9. For the filling, mix goat cheese and cream cheese with chopped herbs, salt, and pepper until smooth.
  10. Pair the macaron shells and fill with the goat cheese mixture before sandwiching them together.
