Delicious mini pies filled with rich beef and sweet mashed potatoes, perfect for cozy gatherings.

Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups sweet potatoes, peeled and mashed
  • 1 cup beef broth
  • 2 tablespoons flour
  • 1 teaspoon dried thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • 1 package pie crusts or puff pastry
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Sauté the ground beef with chopped onions and minced garlic in a skillet over medium heat until browned.
  3. Create a flavor base by stirring in flour, thyme, rosemary, salt, and pepper, then add beef broth and simmer until thickened.
  4. Prepare the sweet potatoes by mixing the mashed potatoes with a pinch of salt.
  5. Roll out the pie crust or puff pastry, cutting it into circles.
  6. Assemble the filling with a spoonful of beef mixture and a spoonful of sweet potatoes on each pastry circle.
  7. Seal the mini pies by folding the pastry over and crimping the edges.
  8. Brush the tops with the beaten egg.
  9. Bake for 20-25 minutes until golden brown.
  10. Serve warm and enjoy!

Notes

These mini pies can be made in advance and stored in the refrigerator for up to a day. They can also be frozen for later use.
