Delightful bars combining crispy rice cereal, creamy cheesecake, peanut butter, and a luscious chocolate topping.

Ingredients

  • 1 cup crispy rice cereal
  • 1 cup granulated sugar
  • 1 cup light corn syrup
  • 1 cup creamy peanut butter
  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips
  • 1 tablespoon butter

Instructions

  1. Combine sugar and corn syrup in a medium saucepan over medium heat, stirring until dissolved.
  2. Remove the saucepan from heat and stir in the peanut butter until smooth.
  3. Mix in crispy rice cereal until well coated.
  4. Press the mixture into a greased 9×13 inch pan.
  5. Beat the softened cream cheese in a mixing bowl until smooth.
  6. Incorporate the powdered sugar and vanilla into the cream cheese until fully combined.
  7. Melt the chocolate chips and butter together in a small saucepan over low heat until smooth.
  8. Pour the melted chocolate over the cheesecake layer.
  9. Refrigerate for at least 2 hours to set, then cut into bars and serve.

Notes

Store in an airtight container in the refrigerator for up to a week. Can also be frozen for up to three months.
