Slow Cooker Barbacoa

Tender, smoky barbacoa made easy in a slow cooker, perfect for tacos or burrito bowls.

Ingredients

  • 3 pounds chuck roast
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1/4 cup lime juice
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons chipotle peppers in adobo sauce, chopped
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup beef broth

Instructions

  1. Heat olive oil in a skillet over medium heat. Sear the chuck roast on both sides until browned.
  2. Transfer the browned roast into the slow cooker.
  3. Add the diced onion and minced garlic, cooking until softened.
  4. Stir in lime juice, apple cider vinegar, chipotle peppers, cumin, oregano, salt, and pepper; mix until well combined.
  5. Pour this mixture over the roast in the slow cooker.
  6. Add the beef broth.
  7. Cover and cook on low for 480 minutes or high for 240 minutes, until tender.
  8. Shred the beef with a fork and mix with the juices; serve warm.

Notes

Searing the roast is key. Consider marinating overnight for more flavor.
