A warm and comforting Sourdough French Toast, perfect for indulgent breakfast or brunch, featuring rich flavors of vanilla and cinnamon.

  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 4 eggs
  • 1/4 cup brown sugar
  • 2 tsp vanilla extract
  • 1 vanilla bean, split and seeds scraped (optional)
  • 1/4 tsp ground cinnamon
  • 1/2 tsp kosher salt
  • 1 lb loaf crusty sourdough bread, sliced into eight 1-inch thick slices
  • Butter, for cooking (clarified is ideal)
  • Maple syrup, for serving
  • Fresh fruit and berries, for serving

Instructions

  1. Preheat your oven to 250°F (120°C). Place a wire rack on a baking sheet and set it aside.
  2. In a wide, shallow dish, combine the milk, heavy cream, eggs, brown sugar, vanilla extract, and the inside seeds of the vanilla bean (if using). Sprinkle in the ground cinnamon and kosher salt, then whisk until smooth and well blended.
  3. Take the crusty sourdough bread slices and gently place them in the egg mixture. Let them soak for about 45 seconds per side, then lift them out and transfer to another baking sheet.
  4. Melt a small pat of butter in a large skillet over medium heat. Add two slices of soaked bread and fry for about 3-4 minutes, flipping carefully to get a golden brown crust.
  5. As each batch is done, transfer it to the wire rack in the oven to keep warm. Repeat the frying process until all slices are cooked.
  6. Serve your warm French Toast drizzled with maple syrup and garnished with fresh fruits and berries.

Notes

Use a thick, hearty artisanal sourdough loaf for the best texture and flavor. Clarified butter has a higher smoke point, making it ideal for frying without burning.
