A flavorful breakfast sandwich featuring chipotle mayo, perfectly cooked eggs, and sharp cheddar cheese on toasted rolls.

Ingredients

  • 4 large eggs
  • 4 sandwich rolls or English muffins
  • 1/2 cup mayonnaise
  • 12 tablespoons chipotle in adobo sauce
  • 1 cup sharp cheddar cheese, shredded
  • Salt and pepper to taste
  • Butter or oil for cooking

Instructions

  1. Prepare the chipotle mayo by mixing together the mayonnaise and chipotle in adobo sauce in a small bowl. Set aside.
  2. Heat a skillet over medium heat and add butter or cooking oil.
  3. Cook the eggs in the skillet, seasoned with salt and pepper, until the whites are set and yolks are runny, about 3-4 minutes.
  4. Toast the sandwich rolls or English muffins until golden and crisp.
  5. Add a piece of cheddar cheese on top of each cooked egg and cover the skillet to melt the cheese.
  6. Assemble the sandwiches by spreading chipotle mayo on the toasted rolls, adding the cheesy eggs, and placing the other half of the roll on top.

Notes

For extra flavor, add avocado slices or arugula. Adjust spice level with more chipotle or jalapeños.
