Ingredients

  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup powdered sugar
  • Food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix together the granulated sugar and vegetable oil until well combined.
  3. Add the eggs and vanilla extract, and mix until smooth.
  4. Whisk together the flour, baking powder, and salt in another bowl. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  5. If desired, divide the dough and add food coloring to create different colored dough.
  6. Chill the dough in the refrigerator for at least 30 minutes.
  7. Scoop tablespoon-sized amounts of dough, roll into balls, and roll in powdered sugar until fully coated.
  8. Place the cookies on the prepared baking sheet, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes, or until the edges are set but the centers are still soft.
  10. Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Chilling is key for maintaining the shape while baking. You can toss the cookies in powdered sugar again after cooling for an extra snowy look.
