Delicious brownie dessert featuring fresh strawberries and a zesty lemon glaze.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, chopped
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan.
  2. In a bowl, mix together the flour, cocoa powder, sugar, and brown sugar.
  3. Add the melted butter, eggs, and vanilla extract to the dry ingredients, and mix until fully combined.
  4. Gently fold in the chopped strawberries, taking care not to break them too much.
  5. Pour the brownie batter into the prepared baking pan and spread it evenly with a spatula.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs (not wet batter!).
  7. Allow to cool completely in the pan before moving on to glaze.
  8. In a separate bowl, mix the powdered sugar, lemon juice, and lemon zest to create a smooth glaze.
  9. Drizzle the lemon glaze generously over the cooled brownies before slicing into squares and serving.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days or in the fridge for up to a week. Freeze for up to 3 months.
