A delightful Strawberry Cream Cake layered with fluffy sponge, whipped cream, and fresh strawberries, perfect for any occasion.

  • 1 cup granulated sugar
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup whole milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, trimmed and sliced
  • 1 cup heavy whipping cream
  • ½ cup powdered sugar
  • Additional strawberries for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. Mix the dry ingredients: whisk together the flour, sugar, baking powder, and salt.
  3. Cream the softened butter until creamy, then add the milk, eggs, and vanilla extract, mixing until well combined.
  4. Combine the wet ingredients into the dry ingredients and mix until just combined.
  5. Bake the cakes for about 25-30 minutes, or until a toothpick inserted comes out clean. Let them cool in the pans for a few minutes before transferring to wire racks.
  6. Prepare the whipped cream by beating the heavy whipping cream and powdered sugar together until soft peaks form.
  7. Assemble the cake by slicing each layer in half, placing one layer on a plate, adding whipped cream and strawberries, and repeating.
  8. Top the cake with additional whipped cream and fresh strawberries.
  9. Slice and serve to enjoy!
