  • 2 cups cooked chicken, shredded
  • 2 cups corn (frozen or canned)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup sour cream
  • 1 can cream of chicken soup
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup crushed tortilla chips
  • Chopped cilantro for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) to create the perfect baking environment for your casserole.
  2. Combine the shredded chicken, corn, sour cream, cream of chicken soup, chili powder, cumin, salt, and pepper in a large bowl.
  3. Transfer the chicken mixture evenly into a greased 9×13 inch baking dish.
  4. Add a generous layer of shredded cheese and crushed tortilla chips on top of the casserole.
