A comforting stuffed chicken breast filled with spinach and cheese, perfect for family gatherings.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sauté the garlic in olive oil over medium heat for about 1 minute.
  3. Wilt the spinach until cooked down.
  4. Mix the spinach with mozzarella and Parmesan, seasoning with salt, pepper, and Italian seasoning.
  5. Prepare the chicken breasts by cutting pockets into them.
  6. Fill each chicken breast with the cheese and spinach mixture.
  7. Bake the stuffed chicken for 25-30 minutes until cooked through.
  8. Let the chicken rest before serving.

Notes

For a twist, try adding sundried tomatoes or use different cheeses like feta.
