Stuffed Pepper Casserole

A comforting one-dish wonder that combines the classic flavors of stuffed peppers in an easy casserole format.

Ingredients

  • 1 pound ground beef or turkey
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup uncooked rice
  • 1 can (15 oz) diced tomatoes, undrained
  • 1 can (8 oz) tomato sauce
  • 2 cups bell peppers, chopped (mixed colors)
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/4 cup fresh parsley, chopped (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Brown the ground beef or turkey over medium heat until browned, breaking it apart with a spatula.
  3. Sauté the diced onion and minced garlic until the onion is translucent.
  4. Mix in the rice, diced tomatoes, tomato sauce, and chopped bell peppers. Add the Italian seasoning, salt, and black pepper, mixing well.
  5. Simmer the mixture by covering and cooking for about 10 minutes, until the rice is partially cooked.
  6. Transfer the mixture to a greased 9×13 inch baking dish, spreading it evenly.
  7. Bake covered with foil for 25 minutes.
  8. Add shredded cheese on top and bake uncovered for an additional 15 minutes.
  9. Let it sit for 5 minutes before serving.
  10. Garnish with fresh parsley if desired.

Notes

Leftovers can be stored in an airtight container for up to 4 days. This dish also freezes well for up to 3 months.
