  • 2 cups sweet potatoes, peeled and diced
  • 1 cup cottage cheese
  • 3 eggs
  • 1/4 cup milk
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 cup oats
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine diced sweet potatoes, cottage cheese, eggs, milk, maple syrup, vanilla extract, cinnamon, nutmeg, and salt in a large bowl until well mixed.
  3. Incorporate the oats and chopped nuts (if using) gently into the mixture.
  4. Pour the mixture into a greased baking dish and spread it evenly.
  5. Bake for 30-35 minutes or until the top is golden.
  6. Cool slightly before serving to allow the cobbler to set.

Notes
