Delicious blueberry muffins topped with a crunchy crumble, perfect for breakfast or a snack.

  • 1 cup fresh blueberries
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 egg
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup brown sugar
  • 1/4 cup oats
  • 1/4 cup butter (cold, cubed)
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix together the flour, granulated sugar, baking powder, and salt in a large bowl.
  3. Whisk together the milk, vegetable oil, and egg in another bowl.
  4. Combine the wet ingredients into the dry ingredients and stir until just combined.
  5. Create the crumble topping by mixing brown sugar, oats, cubed butter, and cinnamon.
  6. Fill muffin cups about 2/3 full with the muffin batter, and sprinkle the crumble topping over each muffin.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Cool before serving.

Store leftovers in an airtight container at room temperature for up to 2 days, or freeze for up to 3 months.
