Ingredients

  • 1 lb ground turkey
  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 tsp olive oil
  • Salt and pepper to taste
  • Optional: grated Parmesan cheese for serving

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the diced onion and cook until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the ground turkey, seasoning it with salt and pepper, and cook until browned.
  5. Mix in the mushrooms and cook until they are soft.
  6. Add the spinach and cherry tomatoes, cooking until the spinach wilts.
  7. Serve hot, topped with grated Parmesan cheese if desired.

Notes

For a heartier meal, serve with quinoa or rice. Leftovers can be stored in the refrigerator for up to 3 days or frozen for a month.
