  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup heavy cream
  • 8 ounces semi-sweet chocolate, chopped
  • 2 tablespoons unsalted butter

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Mix the flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl.
  3. Add the eggs, milk, oil, and vanilla to the dry ingredients. Mix for 2 minutes on medium speed.
  4. Stir in the boiling water carefully. Pour the batter evenly into the prepared pans.
  5. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  6. Let the cakes cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
  7. Heat the heavy cream in a saucepan until it just begins to boil.
  8. Pour the hot cream over the chopped chocolate and let sit for 5 minutes.
  9. Stir until smooth and glossy, then add the butter and mix until incorporated.
  10. Place one layer of the cake on a serving plate. Spread ganache over the top.
  11. Stack the second cake on top and pour the remaining ganache over the top and sides.
  12. Allow the ganache to set before slicing.
