Ingredients

  • 1 onion, diced
  • 1 bell pepper, chopped
  • 2 cups cooked rice
  • 1 can diced tomatoes (about 14.5 oz)
  • 1 cup shredded cheese (optional)
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced onion and chopped bell pepper, cooking until softened, about 5 minutes.
  3. Stir in ground beef or turkey, browning it and mixing with the veggies for another 5-7 minutes.
  4. Add the cooked rice and diced tomatoes, ensuring everything is well combined.
