Delicious and satisfying plant-based tacos filled with roasted cauliflower, smoky BBQ sauce, and fresh slaw.

Ingredients

  • 1 head of cauliflower, cut into florets
  • 1 cup smoky BBQ sauce
  • 8 small tortillas
  • 1 cup shredded cabbage or coleslaw mix
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1 avocado, sliced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss the cauliflower florets in the smoky BBQ sauce until they’re thoroughly coated.
  3. Spread the sauced-up cauliflower on a baking sheet in an even layer and roast for 25-30 minutes until tender and slightly caramelized.
  4. Mix together the shredded cabbage, diced tomatoes, and a pinch of salt in a bowl for the slaw.
  5. Warm the tortillas in a skillet or microwave.
  6. Assemble each tortilla with a generous portion of roasted cauliflower, slaw, avocado slices, and fresh cilantro.
  7. Serve the tacos immediately while they’re hot and fresh.

Notes

Store leftovers in airtight containers in the fridge for up to 3 days. Reheat cauliflower in the oven for best results.
