Ingredients

  • 2 medium sweet potatoes
  • 1 medium butternut squash
  • 2 medium carrots
  • 1 cup crumbled feta cheese
  • 1/2 cup chopped walnuts
  • 1/4 cup cranberry honey balsamic glaze
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the sweet potatoes, butternut squash, and carrots into thin layers.
  3. Layer the vegetables in a baking dish, sprinkling with feta cheese and walnuts in between.
  4. Drizzle with olive oil and season with salt and pepper.
  5. Continue layering until all ingredients are used, creating a colorful mosaic.
  6. Pour the cranberry honey balsamic glaze generously over the top.
  7. Cover with foil and bake for 30-35 minutes.
  8. Remove the foil and bake for an additional 10-15 minutes until golden and bubbly.
  9. Let it cool slightly before serving.
