A luscious cheesecake featuring creamy white chocolate and tangy raspberries, perfect for any celebration.

  • 8 oz cream cheese, softened
  • 1 cup white chocolate chips
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup raspberries, fresh or frozen
  • 1 pre-made graham cracker pie crust

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Melt the white chocolate chips in a microwave-safe bowl, stirring every 30 seconds until smooth.
  3. Beat the softened cream cheese and sugar in a large mixing bowl until light and fluffy.
  4. Add the melted white chocolate and vanilla extract, mixing until well combined.
  5. Whip the heavy cream in another bowl until stiff peaks form, then gently fold it into the cream cheese mixture.
  6. Fold in the raspberries carefully.
  7. Pour the cheesecake mixture into the graham cracker crust and smooth the top.
  8. Bake for 25-30 minutes until the edges are set but the center is slightly jiggly.
  9. Allow to cool, then refrigerate for at least 4 hours or overnight before serving.
  10. Garnish with additional raspberries and white chocolate shavings if desired.

For a dairy-free version, try using a plant-based cream cheese alternative. Pair with coffee or sparkling wine.
