A classic Almond Biscotti recipe that brings the cozy aroma of home, perfect for dipping in coffee.

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 cup whole almonds, toasted

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Combine the flour, sugar, baking powder, and salt in a bowl.
  3. Whisk together the eggs, vanilla extract, and almond extract in another bowl.
  4. Combine the wet and dry mixtures until a dough forms.
  5. Fold in the toasted whole almonds.
  6. Shape each portion into logs about 2 inches wide and 12 inches long.
  7. Bake for 25-30 minutes, or until golden brown.
  8. Cool for about 10 minutes, then slice into biscotti shapes.
  9. Place the slices back on the baking sheet and bake for an additional 10-15 minutes until crisp. Allow to cool completely.

Notes

Store biscotti in an airtight container at room temperature for up to two weeks. These make great gifts and pair wonderfully with coffee or tea.
