Delicious Almond Joy Cookie Bars featuring sweet coconut, rich chocolate, and crunchy almonds, perfect for gatherings or an afternoon snack.

  • 1 cup butter, softened
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup shredded coconut
  • 1 cup chocolate chips
  • 1/2 cup chopped almonds

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish.
  2. Cream the softened butter, brown sugar, and granulated sugar together until smooth.
  3. Incorporate the eggs one at a time, blending well after each addition, then stir in the vanilla extract.
  4. Combine the flour, baking powder, and salt in another bowl, then mix into the creamed mixture.
  5. Fold in the shredded coconut, chocolate chips, and chopped almonds.
  6. Spread the batter evenly in your prepared baking dish.
  7. Bake for 25-30 minutes or until golden brown and a toothpick inserted into the center comes out clean.
  8. Cool in the pan before cutting into squares.
