Delightful Apple Cinnamon Muffins filled with warm spices and seasonal apples, perfect for breakfast or snacks.

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 2 cups peeled and chopped apples
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. Mix together the flour, sugar, baking powder, cinnamon, and salt in a large bowl.
  3. Whisk together the melted butter, milk, eggs, and vanilla extract in another bowl.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the chopped apples evenly throughout the batter.
  6. Fill the muffin cups about 2/3 full with batter.
  7. Pop the muffin tin into the oven and bake for 20-25 minutes.
  8. Let the muffins cool for a few minutes before transferring them to a wire rack.

Notes

For diverse flavors, mix apple varieties. Store in an airtight container at room temperature for up to 3 days or freeze for 2 months.
