Ingredients

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, add cherry tomatoes and fresh spinach. Drizzle generously with olive oil and season with salt and pepper.
  3. Take your feta cheese and crumble it over the vibrant mixture of tomatoes and spinach.
  4. Using a spoon, create small wells in the mixture. Crack eggs into each well, making sure to nestle them in peacefully.
  5. If you’re in the mood for more depth of flavor, add minced garlic and a sprinkle of your favorite herbs.
  6. Bake in the preheated oven for 15-20 minutes or until the eggs are set to your liking.
