  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup salsa (your choice of mild or spicy)
  • 1 cup queso dip (store-bought or homemade)
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro (for garnish)
  • Optional: sliced jalapeños for added spice

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Create the Spice Blend: Mix together the garlic powder, onion powder, smoked paprika, cumin, salt, and black pepper.
  3. Season the Chicken: Pat the chicken breasts dry and rub the spice blend over both sides.
  4. Sear the Chicken: Heat olive oil in a skillet and sear the chicken for 3-4 minutes on each side.
  5. Add the Salsa: Pour the salsa evenly over the chicken.
  6. Spoon on the Queso: Spread the queso dip over the salsa-covered chicken.
  7. Sprinkle with Cheddar: Add shredded cheddar cheese on top of the queso dip.
  8. Bake to Perfection: Transfer the skillet to the oven and bake for 25-30 minutes.
  9. Rest the Chicken: Let the dish rest for about 5 minutes after baking.
  10. Garnish Before Serving: Garnish with cilantro and optional jalapeños.
