A comforting and vibrant casserole filled with seasonal vegetables, topped with Parmesan cheese for a delicious, golden crust.

Ingredients

  • Zucchini
  • Bell peppers
  • Carrots
  • Potatoes
  • Garlic
  • Fresh herbs (e.g., thyme, rosemary)
  • Parmesan cheese
  • Olive oil
  • Salt
  • Pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchini, bell peppers, carrots, and potatoes into even pieces.
  3. Combine the chopped vegetables with minced garlic, fresh herbs, olive oil, salt, and pepper in a large bowl.
  4. Layer the mixed vegetables in a baking dish and sprinkle lightly with Parmesan cheese.
  5. Cover the baking dish with foil and bake for 30 minutes.
  6. Remove the foil and bake for an additional 15–20 minutes, until golden brown.
  7. Serve hot and enjoy!
