  • 1 Zucchini
  • 2 Carrots
  • 1 Red onion
  • 1 cup Asparagus (optional)
  • 1 cup Broccoli (optional)
  • 1 cup Brussels sprouts (optional)
  • 1/4 cup Balsamic vinegar
  • 2 tablespoons Olive oil
  • 1 tablespoon Honey or maple syrup
  • Salt
  • Pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Thyme (optional)
  • 1 teaspoon Rosemary (optional)
  • 1 tablespoon Italian seasoning (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and chop your chosen vegetables into bite-sized pieces.
  3. Whisk together balsamic vinegar, olive oil, and honey in a small bowl.
  4. Combine the chopped vegetables in a large mixing bowl.
  5. Toss with the balsamic glaze until evenly coated.
  6. Season with salt, pepper, and any additional herbs or spices you like.
  7. Spread the glazed vegetables in a single layer on a lined baking sheet.
  8. Roast for about 25-30 minutes, stirring halfway through.
