A comforting hug in the form of baked good, this banana bread is moist, subtly sweet, and perfect for any time of day.

Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the mashed bananas with the melted butter in a mixing bowl.
  3. Stir in the baking soda and salt.
  4. Add the sugar, beaten egg, and vanilla extract, mixing well.
  5. Mix in the flour until just incorporated.
  6. Pour the batter into a buttered 4×8 inch loaf pan.
  7. Bake for 60-65 minutes or until a toothpick comes out clean.
  8. Cool in the pan for a few minutes before transferring to a wire rack.

Notes

Serve warm with cream cheese or butter, and can be frozen for up to 3 months.
