A comforting classic banana cream pie with layers of creamy custard, ripe bananas, and fluffy whipped cream.

  • 23 ripe bananas, sliced
  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 1/3 cup cornstarch
  • 1/4 teaspoon salt
  • 3 large egg yolks
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream (for topping)
  • Additional banana slices (for garnish)

Instructions

  1. Whisking the dry ingredients: In a medium saucepan, whisk together the sugar, cornstarch, and salt until combined.
  2. Adding the milk: Gradually add the milk while continuously whisking the dry mixture. Cook over medium heat, stirring until thick and bubbling, about 5-7 minutes.
  3. Tempering the egg yolks: In a separate bowl, beat egg yolks until pale. Slowly add hot mixture to yolks, whisking to temper. Whisk yolks back into saucepan.
  4. Final cooking: Continue cooking custard for another 2 minutes, stirring constantly until thick. Remove from heat, stir in butter and vanilla.
  5. Layering the bananas: Place sliced bananas evenly at bottom of the crust, then pour warm custard over them.
  6. Chilling the pie: Refrigerate for at least 4 hours until set.
  7. Garnishing and serving: Top with whipped cream and garnish with banana slices before serving.

Notes

For best flavor, use ripe bananas. Keep the banana slices fresh by sprinkling with lemon juice before layering.
