A simple and delicious recipe for wholesome banana oatmeal muffins, perfect for breakfast or a snack.

  • 2 ripe bananas
  • 1 cup rolled oats
  • 1/2 cup milk (or any milk alternative)
  • 1/4 cup maple syrup (optional)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon (optional)
  • 1/2 cup chocolate chips or blueberries (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners or grease it well.
  2. Mash the ripe bananas in a mixing bowl until smooth.
  3. Add the rolled oats, milk, maple syrup, baking powder, baking soda, salt, and cinnamon (if using) to the mashed bananas. Stir until well combined.
  4. Fold in the chocolate chips or blueberries, if desired.
  5. Divide the batter evenly among the muffin cups, filling each about three-quarters full.
  6. Bake for 15-20 minutes or until a toothpick inserted comes out clean.
  7. Cooling in the pan for a few minutes before transferring to a wire rack.

Notes

For fluffier muffins, let the batter sit for 10 minutes before baking. Ensure bananas are very ripe for maximum sweetness.
