Delightful banana pancakes that are fluffy and sweet, perfect for lazy weekend mornings.

Ingredients

  • 2 ripe bananas
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk (or non-dairy alternative)
  • 1 large egg
  • 2 tablespoons melted butter (or oil)
  • 1 teaspoon vanilla extract

Instructions

  1. Mash the ripe bananas until smooth.
  2. Whisk together the flour, baking powder, and salt.
  3. Combine the milk, egg, melted butter, and vanilla extract with the mashed bananas.
  4. Mix the dry ingredients into the wet ingredients until just combined.
  5. Heat a non-stick skillet over medium heat and grease lightly if needed.
  6. Pour 1/4 cup of batter onto the skillet for each pancake.
  7. Flip the pancakes when bubbles form and cook until golden brown.
  8. Serve warm with your favorite toppings.
