A decadent breakfast of thick, buttery French toast topped with caramelized bananas and drizzled with maple syrup.

  • 4 slices of thick bread
  • 2 ripe bananas, sliced
  • 2 eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons brown sugar
  • 2 tablespoons butter
  • Cinnamon to taste
  • Maple syrup for serving

Instructions

  1. Whisk together eggs, milk, vanilla extract, and cinnamon in a bowl.
  2. Heat a skillet over medium heat and add 1 tablespoon of butter.
  3. Dip each slice of bread into the egg mixture, coating both sides.
  4. Cook the bread slices in the skillet until golden brown, about 2-3 minutes per side.
  5. Melt the remaining butter in another pan over medium heat.
  6. Add the sliced bananas and brown sugar, stirring gently to combine.
  7. Cook until the bananas are softened, about 2-3 minutes.
  8. Serve the French toast topped with the banana mixture and drizzle with maple syrup.

Notes

Use day-old bread for best soaking results. Add cinnamon for warmth and depth. For an adult twist, a splash of rum can be added to the banana mixture.
