  • 1/2 cup mayonnaise
  • 12 tablespoons sriracha (to taste)
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 2 green onions, sliced
  • Salt and pepper to taste
  • Vegetable oil for cooking

Instructions

  1. Make the Bang Bang Sauce: In a mixing bowl, combine the mayonnaise, sriracha, honey, soy sauce, and rice vinegar to create the Bang Bang sauce. Adjust the spice level based on your preference for heat.
  2. Prepare the Chicken: Heat a skillet over medium heat and add a splash of vegetable oil. Season the chicken pieces with salt and pepper, then add them to the hot skillet.
  3. Sauté the Chicken: Cook the chicken until it turns golden brown and is cooked through, which should take about 6-8 minutes. Don’t rush this step—let those bits caramelize for extra flavor!
  4. Coat the Chicken in Sauce: Once the chicken is cooked, pour the Bang Bang sauce over it and stir to coat evenly, letting it simmer in the sauce just a minute or so to meld the flavors.
  5. Serve and Garnish: Serve the spicy chicken over a bed of cooked rice, and don’t forget to garnish with sliced green onions for a pop of color and flavor.
