Indulgent Bavarian cream donuts filled with rich, velvety cream and a light, fluffy donut exterior.

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 packet active dry yeast
  • 1/2 cup whole milk
  • 1/4 cup unsalted butter
  • 2 large eggs
  • 1/2 teaspoon salt
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate glaze (optional)

Instructions

  1. Activate the Yeast: In a bowl, combine warm milk (about 110°F) and yeast; let sit for 5 minutes.
  2. Mix the Dry Ingredients: In another bowl, mix together the flour, granulated sugar, and salt until well combined.
  3. Combine and Knead: Add the milk mixture, eggs, and melted butter to the dry ingredients. Mix until the dough starts to come together, then knead on a floured surface until smooth and elastic, about 5-7 minutes.
  4. Let It Rise: Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise until doubled in size, about 1 hour.
  5. Shape and Second Rise: Roll out the dough on a floured surface and cut into rounds. Place them on a floured baking sheet, cover, and let rise again for 30 minutes.
  6. Heat oil in a deep fryer or large pot to about 350°F. Fry the donuts until golden brown on both sides, about 3-4 minutes per side.
  7. Whip the Cream: For the Bavarian cream, whip heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  8. Fill the Donuts: Once the donuts are cooled, use a piping bag to fill them with the Bavarian cream.
  9. Dip in Glaze (Optional): Dip them in chocolate glaze for an indulgent touch.

Notes

Ensure your milk is warm but not hot when activating the yeast. Keep an eye on your donuts while frying to avoid burning.
