Beef Bacon Wrapped Little Smokies

A delightful appetizer featuring bite-sized sausages wrapped in crispy beef bacon with a sweet and smoky glaze.

  • 1 lb Beef Bacon
  • 1.5 lbs Little Smokies Sausages
  • 2/3 cup Light Brown Sugar, packed
  • 1 tbsp BBQ Rub
  • Wooden toothpicks (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a large, rimmed baking sheet with aluminum foil or parchment paper, then place a wire rack on top.
  2. Drain and thoroughly pat dry the little smokies with paper towels. Cut beef bacon into thirds.
  3. In a small mixing bowl, combine light brown sugar and BBQ rub. Whisk until blended.
  4. Wrap each little smokie tightly with a piece of beef bacon. Secure with a toothpick if needed, then roll in brown sugar BBQ rub.
  5. Place each wrapped smokie seam-side down on the wire rack, leaving space between them.
  6. Bake in the preheated oven for 15-20 minutes until bacon firms up and sugar melts.
  7. Carefully flip each smokie and return to the oven for another 15-25 minutes, until bacon is crispy and caramelized.
  8. Remove from oven and let cool for 5-10 minutes before serving warm.

Notes

Best enjoyed fresh but can be stored in an airtight container for up to 3-4 days. Reheat in a preheated oven for best results.
