A comforting and hearty Beef Barley Soup that warms the soul, featuring tender beef, pearl barley, and flavorful vegetables.

Ingredients

  • 1 lb beef stew meat
  • 1 cup pearl barley
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 6 cups beef broth
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 bay leaf

Instructions

  1. Brown the beef in a large pot with olive oil over medium heat until crusted.
  2. Sauté the onion, carrots, celery, and garlic until softened.
  3. Mix in the pearl barley, beef broth, thyme, bay leaf, salt, and pepper.
  4. Simmer for about 1 hour or until the beef is tender and barley is cooked.
