A comforting dish filled with savory ground beef, zesty enchilada sauce, and melted cheese, perfect for family gatherings.

Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce
  • 8 small flour tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste
  • 1 can (15 oz) black beans, drained and rinsed (optional)
  • Chopped cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Sauté the ground beef with chopped onion and minced garlic until cooked through.
  3. Season the filling with half of the enchilada sauce, salt, and pepper. Optionally, add black beans.
  4. Fill each tortilla with the beef mixture and some shredded cheese, then roll them up and place seam-side down in a baking dish.
  5. Assemble by pouring the remaining enchilada sauce over the rolled tortillas and adding more cheese on top.
  6. Bake for about 20 minutes until cheese is bubbly and golden brown.
  7. Garnish with chopped cilantro if desired and serve hot.

Notes

Feel free to customize the filling with vegetables or different meats. Leftovers can be stored in the fridge for up to 3 days or frozen for up to 2 months.
