Delicious and easy-to-make quesadillas filled with flavorful steak, sautéed peppers, and melty cheese, perfect for any occasion.

Ingredients

  • 2 large flour tortillas
  • 1 lb flank steak
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Sour cream and salsa for serving

Instructions

  1. Heat your pan by heating olive oil in a skillet over medium-high heat.
  2. Season the flank steak generously with chili powder, cumin, salt, and pepper.
  3. Sear the seasoned flank steak in the hot skillet for about 4-5 minutes on each side, then remove and slice it thinly.
  4. Sauté the sliced bell pepper and onion in the same skillet until softened, about 3-4 minutes.
  5. Assemble the quesadilla by laying one tortilla in a large skillet, topping it with cheese, steak, sautéed vegetables, and more cheese, then placing the second tortilla on top.
  6. Cook the quesadilla for about 3-4 minutes on each side or until golden brown and the cheese has melted.
  7. Slice the quesadilla into wedges and serve with sour cream and salsa.

Notes

For added flavor variations, consider adding jalapeños or using different types of cheese. Experiment with sides like guacamole or a fresh salad.
