  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 cup unsalted butter, softened
  • 1 cup milk
  • 4 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 2 cups mixed berries (strawberries, blueberries, raspberries)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. Cream together the softened butter and granulated sugar until fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract.
  5. Whisk together the flour, baking powder, and salt in another bowl.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the milk.
  7. Divide the batter evenly among the prepared pans.
  8. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. Whip the heavy cream with powdered sugar until stiff peaks form.
  10. Layer the cakes with whipped cream and mixed berries.
  11. Frost the top and sides of the cake with remaining whipped cream.
  12. Chill the cake in the refrigerator for at least an hour before serving.
