A light and airy dessert featuring a crispy meringue shell topped with whipped cream and fresh mixed berries.

  • 4 large egg whites
  • 1 cup granulated sugar
  • 1 teaspoon white vinegar
  • 1 teaspoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 2 cups mixed berries (e.g., strawberries, blueberries, raspberries)
  • Powdered sugar (for serving)

Instructions

  1. Preheat the oven to 275°F (135°C). Line a baking sheet with parchment paper.
  2. Whip the egg whites on medium speed until soft peaks form.
  3. Gradually add the granulated sugar, 1 tablespoon at a time, beating until stiff peaks form.
  4. Mix in the white vinegar, cornstarch, and vanilla extract until well combined.
  5. Spoon the meringue onto the baking sheet, shaping it into a circle with a dip in the center.
  6. Bake in the preheated oven for about 1 hour, then turn off the oven and let cool completely.
  7. Whip the heavy cream until soft peaks form and spread it over the pavlova.
  8. Top with mixed berries and dust with powdered sugar before serving.

Notes

Ensure your mixing bowl and beaters are clean. If the pavlova cracks, it adds character to the dessert.
