  • 1 cup cottage cheese
  • 2 eggs
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1 cup mixed berries (blueberries, raspberries, strawberries)
  • Honey or maple syrup for drizzling (optional)

Instructions

  1. Blend the base ingredients: In a blender, combine oats, cottage cheese, eggs, baking powder, and vanilla extract. Blend until smooth and creamy.
  2. Fold in the berries: Gently fold in the mixed berries until evenly incorporated.
  3. Preheat your skillet: Heat a non-stick skillet or griddle over medium heat.
  4. Form the pancake bites: Pour small dollops of the batter onto the skillet, spacing them out.
  5. Cook until golden brown: Let them cook for 2-3 minutes on each side, flipping when bubbles form.
  6. Serve and enjoy: Remove from skillet and serve warm, drizzled with honey or maple syrup if desired.
