Ingredients

  • Pasta (e.g., penne or rigatoni)
  • Olive oil
  • Garlic (minced)
  • Crushed tomatoes
  • Heavy cream
  • Vodka
  • Parmesan cheese (grated)
  • Basil (fresh, for garnish)
  • Salt
  • Pepper

Instructions

  1. Cook the pasta according to package instructions. Once it’s al dente, drain and set aside, but don’t forget that delightful pasta water—it can save the day later!
  2. Heat the olive oil in a large skillet over medium heat. Let it shimmer invitingly before adding the minced garlic. Sauté until fragrant, about a minute.
  3. Simmer the crushed tomatoes into the garlic-infused oil, allowing it to simmer for about 5 minutes.
  4. Add the vodka to the pan and let it simmer for another minute.
  5. Combine the heavy cream and grated parmesan cheese, stirring until melded into a silky sauce.
  6. Season with salt and pepper to taste.
