Delicious Birria Tacos made with tender meat and served with a savory dipping broth, perfect for gatherings.

Ingredients

  • 2 lbs beef (chuck roast or brisket)
  • 1 lb lamb (optional)
  • 46 dried guajillo chilies
  • 24 dried ancho chilies
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp black pepper
  • 1 tsp salt
  • 23 cups beef broth
  • Corn tortillas
  • Chopped cilantro
  • Chopped onions
  • Lime wedges

Instructions

  1. Toast the guajillo and ancho chilies in a dry skillet until fragrant, then soak them in hot water for 15 minutes.
  2. Combine the soaked chilies, chopped onion, minced garlic, cumin, oregano, black pepper, and salt in a blender with some soaking water to create a smooth paste.
  3. Brown the beef (and lamb, if using) in a large pot on all sides.
  4. Add the chili paste and beef broth, covering the meat, then let it simmer on low heat for 2-3 hours until tender.
  5. Remove the meat and shred it into small pieces, straining the broth for dipping.
  6. Dip corn tortillas in the reserved broth and fry them on a skillet until slightly crispy. Fill with shredded meat, cilantro, and onions.
  7. Serve with the reserved broth on the side for dipping and lime wedges.

Notes

For best flavor, allow the meat to sit overnight in the refrigerator before reheating and serving.
