Ingredients

  • 2 lbs beef chuck roast
  • 1 lb lamb shoulder
  • 2 dried guajillo chiles
  • 2 dried ancho chiles
  • 4 cloves garlic
  • 1 onion, quartered
  • 2 tsp cumin
  • 2 tsp oregano
  • 2 bay leaves
  • Salt to taste
  • Corn tortillas
  • Chopped onion
  • Chopped cilantro
  • Lime wedges
  • Consomé (broth) for dipping

Instructions

  1. Toast the chiles in a dry skillet until fragrant.
  2. Soak the toasted chiles in hot water for 15 minutes until soft.
  3. Blend with garlic, onion, cumin, oregano, and salt until smooth.
  4. Combine the beef, lamb, bay leaves, and the blended sauce in a large pot.
  5. Pour enough water to cover the meat completely.
  6. Cook on low heat for 3-4 hours until the meat is tender.
  7. Shred the meat using two forks.
  8. Fill warmed corn tortillas with the shredded meat and top with chopped onion and cilantro.
  9. Serve with a side of piping hot consomé for dipping.

Notes

Consider adding spices like smoked paprika for extra flavor. For a vegetarian version, substitute meat with mushrooms and tofu.
