Deliciously chewy blondies infused with Biscoff cookie butter for a rich, buttery treat.

Ingredients

  • 1/2 cup Unsalted Butter, melted
  • 1 cup Light Brown Sugar
  • 1/4 cup Granulated Sugar
  • 1 Large Egg
  • 1 Egg Yolk
  • 1 teaspoon Vanilla Extract
  • 1 cup All-Purpose Flour
  • 1/2 cup Biscoff Cookie Butter (Smooth)
  • 1/2 cup Biscoff Cookies (Lotus Biscoff), crushed
  • 1/4 teaspoon Salt
  • 1 teaspoon Baking Powder

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch square baking pan with parchment paper.
  2. Melt the unsalted butter until smooth and set it aside to cool slightly.
  3. Combine the cooled melted butter with the light brown sugar and granulated sugar, whisking for 1-2 minutes.
  4. Add the large egg, egg yolk, and vanilla extract, whisking until glossy.
  5. Incorporate the Biscoff cookie butter until the mixture is smooth and uniform.
  6. Whisk together the flour, baking powder, and salt in a separate bowl.
  7. Mix the dry ingredients into the wet ingredients until just combined.
  8. Fold in the crushed Biscoff cookies.
  9. Pour the batter into the prepared pan and spread evenly.
  10. Dollop remaining Biscoff cookie butter on top and create a marbled effect with a knife.
  11. Bake for 28-32 minutes until edges are set and center is slightly soft.
  12. Cool completely in the pan for at least 2-3 hours before slicing.
  13. Slice into squares and enjoy!
